Paleo Banana Chocolate Chunk Muffin Recipe for Beginner Bakers

These fluffy banana muffins taste just like banana bread, only with gooey chocolate chunks inside. They’re simple to make and great for any time of day, whether it be 7 AM or 7 PM! 

 Paleo Banana Chocolate Chunk Muffins

These muffins are so soft and warm, reminiscent of banana bread (besides the chocolate chunks, of course). The addition of the chunks to these muffins makes them even sweeter and tastier (as if you didn’t have enough reasons to make them already!). First, preheat your oven to 350℉. Line a regular-size muffin or cupcake pan with standard cupcake wrappers (2″ x 1 1/4″). 

Combine the wet ingredients (mashed bananas, egg, vanilla extract, coconut oil, and honey) in a medium mixing bowl and set aside. Next, mix the dry ingredients (flour, baking soda, and salt) in a separate bowl until well combined. Pour the dry ingredients into the wet ones and thoroughly combine until a batter forms. After that, mix in the chocolate chunks.

Scoop around 3 tablespoons of batter into each cupcake wrapper, about ¾ of the way up. Bake for 25-30 minutes. 

To check for doneness, stick a toothpick in the muffin. If it comes out clean, that means the muffins are done. They also should have a light golden color to them. Let cool for 10-15 minutes. Enjoy!

  • 3 bananas mashed
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • ½ cup coconut oil melted
  • ½ cup honey
  • cups cassava flour
  • 1 teaspoon baking soda
  • ¼ teaspoon sea salt
  • 1 Evolved Signature Dark bar chopped


  • Preheat the oven to 350℉.
  •  Prepare a regular-size muffin or cupcake pan by lining it with standard cupcake wrappers (2" x 1 ¼").
  •  In a medium-size bowl, mix the mashed bananas, egg, vanilla extract, coconut oil, and honey, and set aside.
  •  In a separate bowl mix the flour, baking soda, and salt.
  • Add the flour mixture to the wet ingredients and combine thoroughly until a batter forms.
  • Mix in the chocolate chunks.
  • Scoop about 3 tablespoons of batter into each cupcake liner, about ¾ of the way up.
  • Bake for 25-30 minutes or until a toothpick inserted into the muffins comes out clean. 
  • Let cool for 10-15 minutes and enjoy!
