Oatmeal Cookie Dough Truffles

Ingredients

Ingredients:

  • 1/2 cup cashew butter
  • 1/2 cup coconut sugar
  • 2 tablespoons nondairy milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup rolled oats
  • 3/4 cup oat flour or 1/4 cup coconut flour
  • 1/4 cup chopped dark chocolate
  • 1/2 cup melted dark chocolate

Instructions

Instructions:

  • Mix together butter, sugar, milk, vanilla, salt and cinnamon in medium sized bowl with rubber spatula or wooden spoon(mixture is slightly thick).
  • Add oats, flour and chopped chocolate. Continue mixing until completely uniform(dough will be very thick).
  • Scoop and roll into 12-15 balls.
  • Freeze for 10 minutes. While freezing, prepare melted chocolate in small bowl.
  • Dip truffles into melted dark chocolate, shake off excess and let set up on a parchment lined cookie sheet.
  • Let firm up at room temperature or in the fridge. Enjoy!
