Paleo Chocolate Chunk Cookies

Ingredients

  • ½ cup cashew butter can sub with grass fed butter for non-paleo option
  • ½ cup coconut sugar⁣
  • 1 egg⁣
  • 1 teaspoon vanilla⁣
  • ¾ teaspoons sea salt⁣
  • 1 teaspoon baking soda⁣
  • 1 teaspoon baking powder⁣
  • ¾ cup cassava flour⁣
  • 1 cup chopped dark chocolate
  • 1 cup roughly chopped walnuts optional

Instructions

  • Preheat your oven to 400℉.
  • In a stand mixer, beat together the cashew butter and coconut sugar until light and fluffy.⁣
  • Scrape down the sides and add egg, vanilla, and salt.⁣
  • In a separate bowl, mix together dry ingredients.⁣
  • Slowly incorporate dry ingredients into cashew butter/coconut sugar/egg mixture.
  • Fold in chopped chocolate and walnuts.⁣
  • Scoop 12 equal portions onto a baking sheet and bake for 12 minutes.⁣
  • Let the cookies cool. Enjoy!
