Keto Almond Thumbprint Cookies

The perfect one bite cookie that you don't have to feel bad about after you *accidentally* ate the whole batch. They're low-carb and full of whole ingredients and CHOCOLATE. You will really love these!

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 3 tablespoons monk fruit sweetener
  • ¼ cup coconut oil melted
  • 1 teaspoon almond extract
  • 1 egg
  • ¾ cup coarsely ground almonds
  • 2 Evolved Keto Cups melted


  • Preheat the oven to 350℉. Line a baking sheet with parchment paper and set aside.
  • Whisk together almond flour, coconut flour, baking powder, and monk fruit sweetener.
  • With a rubber spatula, mix in oil, extract, and egg.
  • Scoop dough out into 1-1½" balls and roll around in the ground almonds.
  • Place on baking sheet and press your finger into each, creating a “well” into the center of each ball of dough. Bake for 12 minutes.
  • While cookies are cooling, melt two Evolved Keto Cups in a microwave-safe bowl. Set aside.
  • Once the cookies have completely cooled, spoon some melted Keto Cups into the “wells” of each cookie.
  • Carefully transfer to the freezer for about 15 minutes, or until the chocolate sets up. Enjoy!
