We get it. Life is stressful. To cope, many people resort to stress-baking.  But odds are, the recipe probably isn’t healthy. 

It doesn’t have to be that way. You can have your (pound) cake and eat it too – each slice of this delicious chocolate cake has just 3 grams of net carbs!

All the Details You Need

Preheat your oven to 350℉. Line the inside of a 9” x 5” loaf pan with parchment paper. 

Crack two eggs into a medium mixing bowl. Melt ½ cup of butter in the microwave for 30 seconds and dump it into the bowl. Pour in ¾ cup of Swerve sweetener, ¼ cup cacao powder, and 2 tablespoons of instant coffee granules. 

Now, this is the part where you need to add the ⅓ cup of coconut flour and ½ cup of almond flour. Mix all the ingredients together until they’re fully incorporated.

Add ½ teaspoon baking soda and ¼ cup salt before mixing all the ingredients together. Continue doing this until everything is well mixed. 

Pour the batter into the lined loaf pan. Bake for 35 minutes or until a toothpick poked into the center comes out clean. 

Let the cake rest at room temperature for 10 minutes. While it’s resting, you can melt the Midnight Coconut bar in the microwave. We suggest doing this in 15-second intervals until it’s fully melted. Once it’s melted, drizzle the top of the cake with it.

  • 4 eggs
  • ½ cup butter melted
  • ¾ cup Swerve sweetener
  • ¼ cacao powder
  • 2 tablespoons instant coffee granules

  • ½ cup almond flour
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt

  • Preheat your oven to 350℉
  • Line a 9" x 5" loaf pan with parchment paper and set aside.
  • In a medium mixing bowl, combine eggs, melted butter, Swerve sweetener, cacao powder, and coffee granules. Mix well.
  • Add the coconut and almond flours, baking soda, and salt. Mix until everything's well incorporated and there are no more lumps.
  • Pour the batter into the loaf pan and bake for 35 minutes.
  • Cool for 10 minutes. Drizzle with a melted Evolved Chocolate Midnight Coconut bar and enjoy.
