Keto/Paleo Orange Muffins

Servings: 6 muffins
Ingredients
- 4 tablespoons coconut flour
- ⅔ cup almond flour
- 1 teaspoon baking powder
- 4 tablespoons monk fruit sweetener can use any granulated sweetener
- 2 tablespoons orange zest
- ¼ cup fresh orange juice
- ¼ cup coconut oil melted
- 4 eggs
Instructions
- Preheat oven to 350℉.
- Line a standard 6 muffin tin with cupcake liners. Set aside.
- In a medium-sized bowl, whisk together coconut flour, almond flour, baking powder, and monk fruit sweetener.
- Grate the orange to get the zest needed, then cut and juice it.
- Add the zest, juice, oil and eggs. Whisk again until a smooth batter is formed.
- Divide batter into 6 cupcake liners and bake for 25 minutes or until set in the center. Enjoy!

Substitutions:
Any oil in place of coconut.
Eggs cannot be replaced for this recipe.
