Paleo Chocolate Crepes With Strawberries

Crepes are a part of the history of Evolved Chocolate. No, we’ve never sold crepes but we did have a crepe party in 2016 at one of our old facilities. It was a Friday afternoon in the summer. As a company with maybe 12 people at the time, we did a lot of tasty team-building activities, like this party. 

It was pretty much Subway (or a PizzaRev, a Quiznos, or any ice cream shop), but for crepes. That is, you tell the crepe artist what you want in your crepe. You could either have a savory crepe, a sweet crepe (among the options you could choose from were Evolved Chocolate and strawberries), or if you were really hungry, one of each. Of course, these crepes were gluten-free with vegetarian options available too. 

Fast forward a few years to the present day and this magical chocolate crepe recipe. Most of the people who taste-tested these chocolate strawberry crepes weren’t at that crepe party but hopefully, when you make these crepes yourself, you’ll have fond memories of them for years to come!

How to Make Your Crepes

Mix the almond flour, arrowroot flour, cocoa powder, coconut sugar, and salt in a large bowl. In a second bowl, whisk the eggs and coconut milk together. Then dump that mixture into the other bowl. Whisk all the ingredients together well. 

Heat an 8” frying or omelet pan and spray coconut baking spray into the pan and wait for it to warm up. Only when the pan is warm can you put 2 tablespoons of batter into it. If you don’t wait, the batter would just pool in the middle of the pan. 

Rotate the pan until the batter coats the entire bottom of the pan. The combo of the heat and movement helps the batter spread and cook the crepes evenly. Let the crepe cook for 2 minutes, or until you see little pinholes forming. 

Carefully slide the crepe off onto a plate. This is the hardest step in the recipe because you run the risk of the crepe falling apart. Speed isn’t your friend in this case. Repeat these steps for the rest of the batter. 

It’s time to assemble the crepes! First, melt the chopped chocolate in the microwave for 40 seconds. Take out the melted chocolate and stir it well.

Once all your crepes are done, top them with chopped strawberries and fold the crepes in half. Top the folded crepes with some drizzled melted chocolate and more chopped strawberries for garnish.

Ingredients

  • ½ cup almond flour
  • cup arrowroot flour
  • ¼ cup cocoa powder
  • 4 tablespoons coconut sugar
  • teaspoon sea salt
  • 4 eggs
  • ¾ cup coconut milk
  • 16 ounces fresh strawberries thinly sliced
  • 1 Evolved Signature Dark chocolate bar chopped
  • Coconut cooking spray for pan

Instructions

  • In a large mixing bowl, whisk together the almond flour, arrowroot flour, cocoa powder, coconut sugar, and salt.
  • In another bowl, add eggs and coconut milk. Whisk well.
  • Add egg and milk mixture to dry ingredients and stir together.
  • Heat an 8” frying or omelet pan over medium-high heat. Spray coconut baking spray to the pan. Wait for the pan to heat up.
  • Add 2 tablespoons of batter to the pan and rotate the pan until the batter coats the entire bottom of the skillet.
  • Cook crepe for 2 minutes, or until you start to see little pinholes in the batter.
  • Carefully slide the crepe off the pan to a warming plate. Repeat steps 4-7 for the rest of the batter.
  • Melt the chopped chocolate in the microwave for 40 seconds. Stir the melted chocolate well when it's done.
  • Serve the crepes folded with strawberries inside and for garnish.
  • Drizzle melted chocolate on top of the crepes. Enjoy!
