Paleo Chocolate Cupcakes with Sweetened Cashew Butter Frosting

These moist, paleo-friendly chocolate cupcakes are topped with a creamy frosting made from cashew butter. Combined with our Signature Dark Chocolate and a few other ingredients, you’ll be able to enjoy these cupcakes without needing a trip to the dentist!

Paleo Chocolate Cupcakes with Cashew Butter Frosting

In theory, you could top a cupcake with nut butter instead of a sugary, processed frosting. But some nut butters are oily while others are chunky, neither of which is ideal. Thankfully, creamy cashew butter is already thick and delicious. With a few extra ingredients, you can turn it into a frosting that’ll make any cupcake (like this simple recipe) even more scrumptious! First, preheat your oven to 350℉. Line a regular-size muffin or cupcake pan with standard cupcake liners (2” x 1 ¼”). 

In a medium-size bowl, mix the dry ingredients until well-incorporated. Set aside for now. Next, in a separate medium-size bowl, mix together the wet cupcake ingredients. Pour them into the dry ingredients and mix until a batter forms. If you’re wondering why we use applesauce and eggs together, rather than just one, it’s because the combination moistens the cupcakes even more.

Fill each liner halfway up with batter. Bake for 30 minutes or until a toothpick poked into the center of a cupcake comes out clean. While you’re letting them cool, start on the cashew butter frosting.

This frosting is super simple. All you have to do is mix all of the frosting ingredients together in a medium-size bowl until you get a thick, creamy mixture. Spoon the frosting into a piping bag lined on the bottom with whatever decorating tip you like. Squeeze the piping bag and spread the frosting over the tops of each completely cooled cupcake. Enjoy!

Ingredients

Chocolate Cupcake Ingredients

  • 1 cup almond flour
  • 1 cup cocoa powder
  • ½ teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ¼ teaspoon sea salt
  • ½ cup maple syrup
  • cup unsweetened applesauce
  • cup coconut oil
  • 3 eggs
  • 1 teaspoon pure vanilla extract

Cashew Butter Frosting Ingredients

  • cups creamy cashew butter
  • ½ cup maple syrup
  • ½ bar melted Evolved Signature Dark chocolate
  • ¼ cup coconut milk
  • 1 teaspoon pure vanilla extract

Instructions

For the Chocolate Cupcakes

  • Preheat the oven to 350℉ and line a regular-size cupcake tin with standard cupcake liners (2" x 1¼").
  • In a medium-size bowl, mix the flour, cocoa powder, baking soda, cream of tartar, and salt. Set aside.
  • In another bowl, mix the maple syrup, applesauce, coconut oil, eggs, and vanilla extract.
  • Transfer the wet to the dry ingredients and mix thoroughly.
  • Fill each cupcake liner halfway full and bake for 30 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  • Cool cupcakes completely before frosting.

For the Cashew Butter Frosting

  • Using a medium-size bowl, whisk all ingredients together until you have a smooth consistency.
  • Spoon the frosting into a piping bag with a decorating tip of your choice.
  • Pipe your frosting onto the cupcakes and enjoy!
