Paleo Mini Jelly Donut Bites

Who would’ve thunk it that you could stay paleo AND enjoy a nice doughy,(coconut) sugary, jelly donut bite that you’ll want to have again and again?

Ingredients

Donut Muffin Ingredients:

  • ½ cup cassava flour
  • ¾ cup coconut sugar
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking soda
  • 1 egg
  • cup coconut oil melted
  • cup cold water

Extra Ingredients:

  • ¼ cup of your favorite jam
  • ¼ cup coconut sugar

Instructions

Instructions:

  • Preheat oven to 350℉.
  • In medium sized bowl, whisk together cassava flour, coconut sugar, xanthan gum and baking soda.
  • Once combined, add egg, coconut oil and water. Whisk until a thick dough is formed(it may be helpful to switch to a rubber spatula at this point.)
  • Scoop into a greased mini muffin pan and bake for 13 minutes.
  • Let cool completely.
  • Roll each muffin in the extra coconut sugar.
  • Once cooled, poke a small hole in the top of a muffin with a small knife or skewer and swirl around, creating a pocket on the inside.
  • Fill a piping bag or small ziplock bag with the jam and fill the hole in the muffin completely.
  • Repeat for all muffins.
  • Enjoy!
