Ingredients

Cookie Ingredients

  • 1/2 cup cashew butter can sub with grass fed butter for non-paleo option
  • 1/2 cup coconut sugar⁣
  • 2 flax eggs 2 tablespoons ground flax seed meal soaked in 6 tbsp water for 10 minutes⁣
  • 1 teaspoon vanilla⁣
  • 3/4 teaspoon sea salt⁣
  • 1 teaspoon baking soda⁣
  • 1 teaspoon baking powder⁣
  • 3/4 cup cassava flour⁣
  • 1 cup chopped dark chocolate⁣

Chocolate Fudge Ingredients

  • ½ cup melted dark chocolate
  • ½ cup coconut milk solids scooped from top of a can, dispose of the liquid
  • 4 tablespoons cocoa powder
  • Pinch of salt

Instructions

Cookie Directions

  • Preheat oven to 350℉.
  • In a stand mixer, beat together the butter and sugar until light and fluffy.⁣
  • Scrape down sides and add egg, vanilla extract, and salt.⁣
  • Stop mixing and add rest of ingredients.
  • In a lightly greased muffin pan, press cookie dough into the bottom and up the sides, creating a “cup.”
  • Bake for 15 minutes. If cups puff up too much
  • While baking, prepare fudge filling.

Chocolate Fudge Instructions

  • In a large bowl, mix all ingredients together.

Assemble:

  • Once cookie cups are cooled completely, spoon the fudge into the cavities of each cup.
  • Eat right away, or let set up before enjoying!
  • *Optional* Top with chocolate spread, melted chocolate or anything you'd like!
