Chocolate Cake Ingredients

  • 6 ounces cassava flour
  • ¾ cup coconut sugar
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ½ cup cocoa powder
  • cup coconut oil melted
  • 1 tablespoon apple cider vinegar
  • 1/4 cup cocoa powder
  • 1 cup cold water
  • 1 cup non dairy milk or cold coffee

Vegan Filling Ingredients

  • ½ cup peanut butter
  • ½ cup powdered sugar
  • ¼ cup non dairy milk
  • ~Or~

Paleo/Vegan Filling Ingredients

  • ½ cup creamy cashew butter
  • 2 tablespoons maple syrup
  • ¼ teaspoon salt
  • ½ teaspoon vanilla


For the Chocolate Cake

  • Preheat your oven to 350℉.
  • Whisk together all the dry ingredients in a medium-size bowl.
  • In a separate bowl, mix together all wet ingredients and slowly whisk them into the bowl of dry ingredients.
  • Spread batter flat on a parchment-lined jelly roll sheet and bake for 13 minutes. Be careful to not overbake.
  • While cooling, make the vegan or paleo/vegan filling.

For the Vegan Filling

  • Beat together peanut butter and powdered sugar. This will look dry. 
  • Slowly add the milk, making sure the filling doesn't get too thin and runny. You may not need the whole ¼ cup of milk, or you may need more, depending on the type of peanut butter used.

For the Paleo/Vegan Filling

  • Mix together the cashew butter and maple syrup with a rubber spatula until it starts to thicken a bit. 
  • Add salt and vanilla.


  • Once the cake has cooled, spread the filling over the whole thing, leaving a ½" from the edges.
  • Slowly and very carefully roll the cake, starting on the long end. Use the parchment that it was baked on to help roll it tightly, while slowly pulling the parchment back. Some of the filling might come out while rolling but don’t panic! Just discard or eat it with a spoon!
  • Place roll in the fridge to firm up for an hour.
  • Transfer to wire rack set over a plate or bowl and pour melted chocolate over the top, covering the whole thing.
  • Let it set up again in the fridge before transferring to a platter and cutting it up. Enjoy!
