Pretzel Bites

Turning dough into a pretzel shape is fun and all, but it’s so much simpler when you can just turn the dough into little bites. Oh, and did we mention these gluten-free pretzel bites pair well with 4 types of dipping sauces that will satisfy whatever craving you have, from sweet to spicy to savory!

Ingredients

Pretzel

  • 1 teaspoon coconut sugar
  • 1 teaspoon salt
  • 2 teaspoons xanthan gum
  • 1 cup psyllium husk for non keto version you use Cassava Flour
  • ¼ cup arrowroot flour
  • ¼ cup tapioca flour
  • 1 teaspoon coconut oil
  • 1 cup warm water if using cassava flour you may need to add an additional 1/3 cup water
  • 1 teaspoon baking soda

Cinnamon Sugar Dip

  • 1 ½ tablespoons unsalted vegan butter
  • 2 tablespoons coconut sugar
  • ½ teaspoon ground cinnamon
  • 2 tablespoons coconut milk

Chocolate Dip

  • 1 ¼ cup chopped dark chocolate
  • ¼ cup coconut milk
  • 1 teaspoon coconut oil

Spicy Mustard Dip

  • ¼ cup nut milk
  • 1-2 tablespoons mustard
  • 2 – 4 tablespoons hot sauce
  • ½ cup raw cashews Soaked for 1 hour

Tangy Raspberry Dip

  • ½ cup Fresh raspberries
  • 1 tablespoon raspberry vinaigrette
  • ¼ cup coconut fat from one can of full fat coconut milk
  • 2 teaspoon granulated monk fruit sweetener Optional
  • 2 tablespoons honey
  • ¼ teaspoon salt
  • 1 teaspoon lemon juice

Instructions

Pretzel Dough

  • Preheat oven to 400’F. Cover one sheet tray with parchment paper or silpat, a bowl with a sift over it and fill a small pot with water.
  • Whisk together the coconut sugar, salt, xanthan gum, psyllium husk, arrowroot flour and tapioca flour.
  • Add the coconut oil and warm water. Mix until dough begins to form. Put pot of water on high heat until it begins to boil.
  • Knead dough briefly on well floured surface, then separate dough into 15-16 equal pieces and shape each into sticks either by rolling or in your hands. Place on prepared sheet pan.
  • When water comes to a boil, turn the heat down to medium and add baking soda. It will fizz and bubble briefly then dissipate.
  • Drop each pretzel dough piece gently into the water and keep in water no longer than 1 minute, or until they begin to float. Then, using a spatula, remove them and place them in the sift to try and remove the excesses moisture before placing them on the prepared sheet tray. Sprinkle some Kosher salt on top of each little bite.
  • Bake at 400’F for 30 minutes than turn down to 350’F and bake for an additional 15 minutes. Let cool completely before enjoying!

Cinnamon Sugar Dip

  • In a small pot, melt the vegan unsalted butter. Then add the coconut sugar, cinnamon and coconut milk. Cook on medium heat for 3-4 minutes or until it thickens into a caramel consistency.
  • Pour mixture into a heat resistant bowl and let cool completely before whisking into the coconut fat. Cover and set aside to be used later or use immediately.

Chocolate Ganache Dip

  • In a small bowl, add 1 cup chopped chocolate, coconut milk, and coconut oil. Heat in microwave for 1 ½ minutes, then add the ¼ cup chopped chocolate and stir until completely smooth. Cover and store at room temperature for later use or use immediately.

Spicy Mustard Dip

  • Combine all ingredients in a small food processor or blender until smooth. Cover and store in refrigerator for later use or enjoy immediately!
