Vegan Chocolate Banana PB Sandwich
Substitute the bread in your peanut butter sandwich for 2 moist chocolate cookies featuring mashed bananas. Don’t worry, we won’t judge you if you decide to have this for lunch!

Ingredients
Cookie Ingredients
- 1 banana mashed
- 3 tablespoons cocoa powder
- 2 tablespoons maple syrup
- 1 tablespoon coconut oil melted
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 cup almond flour
- ½ cup gluten free rolled oats
- ⅓ cup chocolate chips
Filling Ingredients
- ⅓ cup creamy peanut butter can sub for any nut butter
- 2 tablespoons maple syrup
Instructions
Cookie Instructions
- Preheat oven to 350℉.
- Mash banana in a large bowl. Add cocoa powder, maple syrup and coconut oil.
- Whisk in baking soda, baking powder, flour, oats and chocolate chips. Mix well.
- Scoop into 14-16 mounds and press flat.
- Bake for 10-12 minutes, until cookie is set in center.
For the Filling
- While they cool, make the filling by mixing peanut butter and maple syrup together in small bowl.
- Once cookies are cool, spread about 1-2 tbsp worth of the PB filling on the bottom of one cookie, and sandwich it with another. Enjoy!
