Vegan Chocolate Banana PB Sandwich

Substitute the bread in your peanut butter sandwich for 2 moist chocolate cookies featuring mashed bananas. Don’t worry, we won’t judge you if you decide to have this for lunch!

Cookie Ingredients

  • 1 banana mashed
  • 3 tablespoons cocoa powder
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut oil melted
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup almond flour
  • ½ cup gluten free rolled oats
  • cup chocolate chips

Filling Ingredients

  • cup creamy peanut butter can sub for any nut butter
  • 2 tablespoons maple syrup


Cookie Instructions

  • Preheat oven to 350℉.
  • Mash banana in a large bowl. Add cocoa powder, maple syrup and coconut oil.
  • Whisk in baking soda, baking powder, flour, oats and chocolate chips. Mix well.
  • Scoop into 14-16 mounds and press flat.
  • Bake for 10-12 minutes, until cookie is set in center.

For the Filling

  • While they cool, make the filling by mixing peanut butter and maple syrup together in small bowl.
  • Once cookies are cool, spread about 1-2 tbsp worth of the PB filling on the bottom of one cookie, and sandwich it with another. Enjoy!

Peanut butter can be subbed for any creamy nut or seed butter(we like cashew butter, sunflower seed butter, almond butter, and tigernut butter)
