Vegan/Paleo Apple Pecan Blondie Skillet
This blondie base is topped with soft apples, crunchy pecans, and cinnamon in this vegan, paleo, dessert skillet. It will evoke memories of past Thanksgivings and the fall season In general!

Ingredients
Caramel Sauce Ingredients
- ¼ cup coconut sugar
- 2 tbsp coconut oil
- 1 tbsp molasses
- ¼ cup non-dairy milk
- Pinch of salt
Blondie Ingredients
- 2 cups almond flour
- 4 tbsp coconut flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tsp cinnamon
- 2 flax eggs* can use 2 standard eggs for non-vegan version
- 6 tbsp melted coconut oil
- 4 tbsp maple syrup
- *To make one flax egg soak one tbsp of ground flax seed meal with three tbsp water for five minutes.
Extra Ingredients
- 1 green apple sliced into thin segments
- ½ cup pecan halves
Instructions
For the Caramel Sauce
- Combine all ingredients in small saucepan and cook on medium heat for 9 minutes, while mixing every so often. It will thicken as it cools.
For the Blondie
- Preheat oven to 350℉.
- In a large bowl, mix together all dry ingredients, then add the rest of the wet ingredients.
- Mix with rubber spatula and then transfer to an 8” skillet.
- Line top with sliced apples.
- Drizzle top with caramel sauce and sprinkle pecans.
- Bake for 25 minutes.
- Let cool at least 10 minutes. Enjoy!
