Vegan/Paleo No Bake Key Lime Pie

Paleo/Vegan Crust Ingredients

  • 5 large dates pitted
  • 3 tablespoons almonds chopped
  • ½ teaspoon cinnamon
  • 1 tablespoon Unsweetened Roasted Coconut Butter melted

*Nut-Free Version*:

  • 3 tablespoons GF graham cracker crumbs
  • ½ teaspoon cinnamon
  • 1 ½ tablespoons Evolved Unsweetened Roasted Coconut Butter melted

Filling Ingredients

  • Juice from 2 key limes
  • cup full fat coconut milk skimmed off the top of a can
  • 1 ½ tablespoons maple syrup
  • 1 tablespoon arrowroot flour


For the Crust

  • Place all ingredients in a small food processor and blend until you get a uniform mixture.
  • Press firmly and evenly into a small tart pan and put in the fridge while making the filling.

For Filling

  • Combine juice, syrup, and milk in a small saucepan on medium-high heat.
  • In a small bowl, mix the arrowroot flour with 2 tablespoons of the hot milk mixture until a uniform, lump-free mix.
  • Pour back into the mixture on the stove top and whisk vigorously until it starts to thicken.
  • Pour into prepared pie shell and refrigerate for 5 hours or overnight to firm up.
