Vegan/Paleo No Bake Key Lime Pie
Refreshing, creamy, sweet and tart, you're going to LOVE this no bake pie!

Ingredients
Paleo/Vegan Crust Ingredients
- 5 large dates pitted
- 3 tablespoons almonds chopped
- ½ teaspoon cinnamon
- 1 tablespoon Unsweetened Roasted Coconut Butter melted
*Nut-Free Version*:
- 3 tablespoons GF graham cracker crumbs
- ½ teaspoon cinnamon
- 1 ½ tablespoons Evolved Unsweetened Roasted Coconut Butter melted
Filling Ingredients
- Juice from 2 key limes
- ⅓ cup full fat coconut milk skimmed off the top of a can
- 1 ½ tablespoons maple syrup
- 1 tablespoon arrowroot flour
Instructions
For the Crust
- Place all ingredients in a small food processor and blend until you get a uniform mixture.
- Press firmly and evenly into a small tart pan and put in the fridge while making the filling.
For Filling
- Combine juice, syrup, and milk in a small saucepan on medium-high heat.
- In a small bowl, mix the arrowroot flour with 2 tablespoons of the hot milk mixture until a uniform, lump-free mix.
- Pour back into the mixture on the stove top and whisk vigorously until it starts to thicken.
- Pour into prepared pie shell and refrigerate for 5 hours or overnight to firm up.
