Vegan Nutty Fudge Cake Bites

These taste of these chewy fudge cake bites is nuts. Seriously, there are nuts on the cake and inside it too!

Fudge Cake Ingredients

  • ½ cup almond flour
  • ¼ teaspoon baking powder
  • cup cocoa powder
  • 2 flax eggs soak 2 tbsp of ground flaxseed meal in 6 tbsp water for 5 minutes
  • 3 tablespoons maple syrup
  • 4 tablespoons cashew butter
  • 2 tablespoons melted Evolved Signature Dark bar
  • ¼ cup water

Filling Ingredients

  • ¼ cup cashew butter
  • 1 tablespoon maple syrup
  • ½ teaspoon vanilla
  • Pinch of salt
  • ¼ cup chopped nuts
  • ½ bar Evolved Almond Sea Salt melted

Coating Ingredients

  • ½ bar Evolved Almond Sea Salt melted


For the Fudge Cake

  • Preheat the oven to 350℉.
  • Combine flour, baking powder, and cocoa powder in large bowl.
  • Add the rest of the fudge cake ingredients and continue mixing until well combined.
  • Pour into a 6” square pan and bake for 25-35 minutes, or until the center is set.
  • Let cool completely.

For the Filling

  • Combine all the filling ingredients in a small bowl with a rubber spatula.


  • Once the cake is completely cooled, cut it in exactly in half vertically down the center.
  • Very gently press the filling over one half of the cake and press the other half over the filling, creating a sandwich.
  • Let it set in freezer for 20 minutes.
  • Pop the cake out of the freezer and cut the cake into fourths. Then cut each of those 4 squares in half again, so that there are 8 in total.
  • Dip each square into the chocolate and shake off excess. Let the cake bites set up in the fridge for 10 minutes.
  • Store in an airtight container in the fridge for up to a week. Enjoy!
