Keto French Toast

This french toast is worth the extra step of making the bread yourself! It's recommended to make the bread the night before, to make your morning easy and delicious!

Ingredients

Bread Ingredients

  • 4 tablespoons coconut flour
  • cup almond flour
  • 1 teaspoon baking powder
  • 2 tablespoons granulated monk fruit sweetener Can sub with coconut sugar for non keto version
  • ½ cup non dairy milk
  • ¼ cup coconut oil
  • 4 eggs

Egg Mixture Ingredients

  • 4 eggs
  • ½ cup non dairy milk
  • 1 teaspoon vanilla
  • 2 teaspoons cinnamon

Coconut oil to grease the frying pan

    Instructions

    For the Loaf

    • Preheat oven to 350℉.
    • Line a 3" x 5" baking loaf with parchment paper. Set aside.
    • In a medium-size bowl, whisk together coconut flour, almond flour, baking powder, and monk fruit.
    • In a separate small bowl, mix together the rest of the ingredients.
    • Add wet ingredients to dry ingredients and whisk until a smooth batter is formed.
    • Pour into small loaf pan and bake for 45-60 minutes, until toothpick inserted in center comes out clean.
    • Let cool completely before making French toast.

    For the Egg Mixture

    • Mix the eggs, non-dairy milk, vanilla extract, and cinnamon in a large, shallow bowl.

    Assemble

    • Add 1 tablespoon coconut oil to grease the frying pan
    • Cut the pre-baked and cooled bread into slices (as if you bought a pre-sliced loaf), about ½” thick.
    • Dip each slice in egg mixture, coating both sides, and immediately put on hot and greased pan.
    • Cook each side 2-3 minutes or until each side is browned.
    • Enjoy warm and top with Roasted Coconut Butter, sugar-free maple syrup, cinnamon, or anything you’d like!
