Cookies and Cream Mug Cake

This is a perfect and quick treat to have when you want to indulge but don't want to deal with the oven or even the dishes! It takes no time to whip up, and it's even faster to eat!

Ingredients

  • 2 tablespoons cassava flour
  • 2 tablespoons cocoa powder
  • ¼ teaspoon baking powder
  • 1 egg for vegan option, sub with ½ mashed banana
  • 1 tablespoon melted coconut oil
  • 1 tablespoon non dairy milk
  • 1 ½ tablespoons coconut sugar
  • 3 crushed gluten-free Oreos optional
  • Handful of chopped dark chocolate

Instructions

  • Mix all ingredients, EXCEPT CHOPPED CHOCOLATE, together in a microwave-safe mug.
  • Add handful of chocolate to the center of cake batter, letting some sink into it.
  • Cook in the microwave for 40 seconds. Enjoy!
