Oh no, you forgot someone’s birthday and you don’t have a cake to give them! Not to fear, we got you covered with this birthday cake in a mug that’s the perfect go-to last minute cake complete with frosting and sprinkles.

Ingredients

Cake Ingredients:

  • ½ cup almond flour
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 ½ tablespoons coconut oil melted
  • 1 egg
  • 2 tablespoons maple syrup
  • 1 tablespoon sprinkles

Icing:

  • ¼ cup creamy nut butter or peanut butter (we used cashew butter)
  • 2 tablespoons cocoa powder
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla

Instructions

For the Cake:

  • Mix together all ingredients in microwave safe mug and cook for 1 ½ minutes in microwave.

For the Icing:

  • Mix together all ingredients with rubber spatula until thick, then pipe or spread on mug cake.
  • Add sprinkles as garnish.
  • Cake will keep in fridge in an airtight container for up to a week. Enjoy!
