Keto/Paleo Orange Muffins

Ingredients

  • 4 tablespoons coconut flour
  • cup almond flour
  • 1 teaspoon baking powder
  • 4 tablespoons monk fruit sweetener can use any granulated sweetener
  • 2 tablespoons orange zest
  • ¼ cup fresh orange juice
  • ¼ cup coconut oil melted
  • 4 eggs

Instructions

  • Preheat oven to 350℉.
  • Line a standard 6 muffin tin with cupcake liners. Set aside.
  • In a medium-sized bowl, whisk together coconut flour, almond flour, baking powder, and monk fruit sweetener.
  • Grate the orange to get the zest needed, then cut and juice it.
  • Add the zest, juice, oil and eggs. Whisk again until a smooth batter is formed.
  • Divide batter into 6 cupcake liners and bake for 25 minutes or until set in the center. Enjoy!

Notes

Difficulty Level: Easy
Substitutions:
Any oil in place of coconut.
Eggs cannot be replaced for this recipe.
