Paleo Winter Sugar Cookies

You won't feel guilty enjoying these crumbly, buttery sugar cookies flecked with crunchy, colorful sprinkles that might bring back a childhood memory or two, as we made them paleo-friendly! Share this recipe with your kids (or grandkids) and make some new winter memories with them.

Ingredients

  • 2 cups almond flour
  • ¼ cup coconut flour
  • ¼ teaspoon baking soda
  • teaspoon sea salt
  • ¼ cup ghee melted
  • ½ cup honey
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • Blue and white sprinkles optional

Instructions

  • Preheat the oven to 350℉.
  • Line 2 cookie sheets with parchment paper. Set aside.
  • In a medium-size bowl, combine the almond, coconut flour, baking soda and salt. Set aside.
  • In another medium-size bowl, combine the ghee, honey, egg and vanilla. With a hand mixer, cream together the ingredients until smooth.
  • Thoroughly combine the dry ingredients with the wet ingredients.
  • Wrap the dough ball in plastic wrap. Chill for 2 hours.
  • On your countertop, place the dough between 2 separate pieces of parchment paper and roll out to ¼ or ½" thickness.
  • Pull away the top parchment paper and use a cookie cutter to cut out shapes.
  • Using a spatula, place cookies on cookie sheets. Decorate with sprinkles if desired.
  • Bake for 10-12 minutes or until beginning to turn light brown. Let cookies cool completely. Enjoy!
