Preheat the oven to 350℉.
Line 2 cookie sheets with parchment paper. Set aside.
In a medium-size bowl, combine the almond, coconut flour, baking soda and salt. Set aside.
In another medium-size bowl, combine the ghee, honey, egg and vanilla. With a hand mixer, cream together the ingredients until smooth.
Thoroughly combine the dry ingredients with the wet ingredients.
Wrap the dough ball in plastic wrap. Chill for 2 hours.
On your countertop, place the dough between 2 separate pieces of parchment paper and roll out to ¼ or ½" thickness.
Pull away the top parchment paper and use a cookie cutter to cut out shapes.
Using a spatula, place cookies on cookie sheets. Decorate with sprinkles if desired.
Bake for 10-12 minutes or until beginning to turn light brown. Let cookies cool completely. Enjoy!
