Fill the center of 6 rectangles with 2 tablespoons of the apple filling each.
Beat 1 egg and 1 tablespoon of water together to make an “egg wash”, and brush some on the edges of the pastry, surrounding the apple filling.
Carefully place a second piece of dough on top of that and pinch all around the edges, sealing the apples inside (this is where the egg wash is important, it acts as a glue!).
After assembling all 6 pies, transfer to a baking sheet.
Coat each pie evenly with egg wash over the tops (this will help them crisp and get shiny).
Mix together ¼ cup coconut sugar and 2 teaspoons cinnamon in a small bowl, and evenly sprinkle over each pie.
With a sharp knife, slice 3 small lines across the tops and bake for 20 minutes.
Let cool for 10 minutes before enjoying!
