Paleo McDonalds Apple Pies

These will bring you back to the times when you'd pull through the drive-thru, get a greasy burger and fries, then top it off with a scorching hot apple hand pie. Gooood times.

Ingredients

Apple Filling Ingredients

  • 2 cups finely chopped apples about 2 peeled apples, we used granny smith
  • 2 tablespoons arrowroot or tapioca starch
  • 2 teaspoons cinnamon
  • 2 tablespoons coconut sugar
  • ½ cup water
  • 1 tablespoon lemon juice

Pie Crust Ingredients

  • cup cassava flour
  • ½ cup tapioca or arrowroot flour
  • ¼ cup coconut sugar
  • ¼ cup coconut oil
  • 2 eggs
  • 2 tablespoons maple syrup

Topping Ingredients

  • 1 egg
  • 1 tablespoon water
  • ¼ cup coconut sugar
  • 2 teaspoons cinnamon

Instructions

For the Apple Filling

  • Preheat oven to 350℉.
  • In a saucepan, coat the apples in the arrowroot or tapioca starch.
  • Place the apples on the stove top and set to medium heat. Toss again until evenly coated. Let cook for another minute.
  • After one minute, mix in the cinnamon and sugar. Toss again until evenly coated. Let cook for another minute.
  • Pour water over the entire thing. Mix and let simmer WITH a lid on.
  • After cooking for 5 minutes, take off from heat, mix in the lemon juice, and set aside while preparing the pie crust.

For the Pie Crust

  • Whisk together the flours and coconut sugar.
  • Add in the coconut oil, eggs, and maple syrup. Mix with a rubber spatula or wooden spoon, as this will become very thick.
  • Scoop the dough out into one ball and wrap in plastic wrap. Let set up in the fridge for 15 minutes.
  • Remove the dough from the fridge and cut into 12 equal pieces (1 ounce each).
  • Dust your countertop and rolling pin with more cassava flour. Carefully roll each piece of dough out to about 3.5”x 4.5” rectangles (you will need to be sure the dough has enough flour under it at all times so it doesn’t stick to the countertop).

Assemble

  • Fill the center of 6 rectangles with 2 tablespoons of the apple filling each.
  • Beat 1 egg and 1 tablespoon of water together to make an “egg wash”, and brush some on the edges of the pastry, surrounding the apple filling.
  • Carefully place a second piece of dough on top of that and pinch all around the edges, sealing the apples inside (this is where the egg wash is important, it acts as a glue!).
  • After assembling all 6 pies, transfer to a baking sheet.
  • Coat each pie evenly with egg wash over the tops (this will help them crisp and get shiny).
  • Mix together ¼ cup coconut sugar and 2 teaspoons cinnamon in a small bowl, and evenly sprinkle over each pie.
  • With a sharp knife, slice 3 small lines across the tops and bake for 20 minutes.
  • Let cool for 10 minutes before enjoying!
