Cashew Cookie Bars

  • cup creamy cashew butter or sub any nut butter
  • ¼ cup maple syrup
  • 2 eggs or sub 2 flax eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • cup cassava flour or sub 1 cup almond flour
  • 1 teaspoon cinnamon
  • ½ cup chopped dark chocolate
  • ½ cup nuts optional


  • Preheat your oven to 350℉.
  • Whisk together cashew butter and maple syrup until well combined.
  • Whisk in eggs one at a time.
  • In separate bowl, sift all dry ingredients together.
  • Fold the dry ingredients into the wet ingredients until just combined.
  • Add chocolate and nuts, fold gently.
  • Pour into 8" x 8” pan and bake for 20 minutes.
  • Cut into bars and enjoy!
