Paleo Monkey Munchin’ Bites

Ingredients

  • 2 ripe bananas
  • ¼ cup coconut oil melted(or fat of choice)
  • 2 eggs or 2 flax eggs or egg substitute of choice
  • 2 teaspoons cinnamon
  • 1 tablespoon maple syrup or 1-2 tablespoons any sweetener of choice--depending on sweetness of bananas
  • 2 cups almond flour or 1 cup cassava flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup roughly chopped Monkey Munch

Instructions

  • Preheat your oven to 350℉.
  • In a medium-sized bowl, mash bananas with the back of a fork until there are almost no lumps.
  • Mix in the coconut oil, eggs, cinnamon, and maple syrup.
  • In another small bowl, combine almond flour, baking powder, and baking soda.
  • Incorporate the dry mixture into the mashed banana mixture and mix until just combined.
  • Fold in the chopped Monkey Munch.
  • Scoop batter into a greased mini muffin tin pan and bake for 20 minutes at 350℉.
