2
ripe bananas
¼
cup
coconut oil
melted(or fat of choice)
2
eggs
or 2 flax eggs or egg substitute of choice

teaspoons
cinnamon
1
tablespoon
maple syrup
or 1-2 tablespoons any sweetener of choice--depending on sweetness of bananas

cups
almond flour
or 1 cup cassava flour

teaspoon
baking powder
½
teaspoon
baking soda

roughly chopped Monkey Munch
Instructions
Preheat your oven to 350℉.
In a medium-sized bowl, mash bananas with the back of a fork until there are almost no lumps.
Mix in the coconut oil, eggs, cinnamon, and maple syrup.
In another small bowl, combine almond flour, baking powder, and baking soda.
Incorporate the dry mixture into the mashed banana mixture and mix until just combined.
Fold in the chopped
Monkey Munch.
Scoop batter into a greased mini muffin tin pan and bake for 20 minutes at 350℉.
